Nutrition Support Translational Research Clinic
Metabolic Kitchen
The metabolic kitchen can be used for food preparation, feeding studies, and live cooking demonstrations. The UH Cancer Center has established a partnership with the Kapiolani Community College (KCC) Culinary Institute of the Pacific who may be able to assist with food preparation, if needed. The metabolic kitchen is accessed through a doorway from the nutrition education room. The kitchen occupies 980 square feet of space, and includes a walk-in freezer, walk-in refrigerator, ice maker, large gas range, wok burner, convection oven, combi-oven, three-compartment sink system, commercial dishwasher, hand-washing sink, shelving, and a walk-in pantry. Video cameras are placed on the ceiling for filming of food demonstrations. The live demonstrations can be projected in real-time to the HD television display mounted in the nutrition education room.
Clinic Exam Rooms
Each exam room is equipped with an adjustable medical exam table, a sink with four feet of counter-top space, a round table, a phone, internet/multimedia outlets, two chairs, and 4x10 feet cabinet and drawer space. One exam room is also equipped with a balance beam scale and stadiometer for weight and height measurements.
Nutrition Education Room
The Nutrition Education Room occupies 375 square feet and includes tables and chairs with functionality to reconfigure to multiple floor arrangements capable of seating up to 20 people. The room has its own separate entrance from the exterior of the Cancer Center. The nutrition education room includes a 52-inch HD television display with Internet access and audio-visual recording equipment. There is a movable divider between the nutrition education room and the metabolic kitchen to accommodate educational sessions associated with food preparation demonstrations. The room’s flexibility also allows the space to be used for on-site feeding of individuals participating in metabolic studies.
